Hope you all had a wonderful Easter, if you celebrate it.
We did something different this year and had an Easter brunch at my house instead of Easter dinner at my parents’ house.
The change was mostly due to the fact that we had to take Ricky back to the airport to fly back to college (after his spring break) at 4 p.m. Plus, one of my brothers was gone, along with his wife, since they’re traveling this month in the Phillipines.
So … little different this year … but it was really fun. I’m getting used to changing up some traditions now.
We had my parents over, plus my other brother and my little nephew. (It was fun buying “Easter bunny” things for a little one again!)
And the brunch menu was fabulous! Here’s what we had (wish I took pics of the food, but I was too busy … er .. eating …):
- Strata — my mom made a great egg dish with ham in it and — this was the unique part — hash browns in it. Yum.
- Sausage
- Curly baked fries
- Deviled eggs
- Strawberry-and-goat-cheese salad with pecans — A recipe I got from Lifescript! It was delicious. It’s here.
- Cinnamon rolls
- Lemon cupcakes
- Mimosas
We definitely had plenty of food! It was all very good.

This was Dan’s and my first Easter as a married couple – so, we’re at the point where we are starting brand new traditions for our family. It was just the two of us, so we slept in, when to church, and then had lamb chops for dinner (and then I ran 12 miles because I’m training for a half marathon, but I hope that doesn’t become tradition because I’m crazy sore today!).
